Cake Batter Cookies
So, I was pinteresting, while rocking Maddox, and I found a recipe that looked super easy, yummy and fun for Maya. They were called Cake Batter Cookies and I knew we had to try them! Here’s the recipe: CakeBatterCookies
The awesomeness about this recipe is that you only need 4 ingredients: 1 box cake mix, 1 stick of butter, 2 eggs and 1 tsp of vanilla. Who doesn’t have that?
In a large bowl, dump box cake mix, 1 stick of softened butter (that’s key, it needs to be SOFT), 2 eggs and 1 teaspoon of vanilla.
Get your handy helper to stir it up. My butter was definitely not soft enough. I finally had to go after the dough with my hands. It was a sticky mess!
The dough should be semi-stiff. Pile it all in the center of the bowl, cover with plastic wrap (and a lid, if you have one) and place in the refrigerator for at least 2 hours.
After dough has chilled, dust a surface with flour, dump out your dough and roll, roll, roll! My dough was pretty sticky, I had to start off with lots of flour on the counter and sprinkled on top of the mound of dough.
Next, comes the fun part… get out your favorite cookie cutters and start stampin’.
We had to work fast because when this dough starts to come back to room temperature, it gets sticky! After the first set of cookies were stamped, I rolled the dough back into a ball, added more flour to the counter and the top of the ball and rolled out again. (and again, the third time I think too much flour got added in the cookies didn’t seem to raise much in the oven, bummer, but Maya still liked them).
Place on a greased (or lined) cookie sheet. It’s best to place them pretty far apart, these babies get puffy! Trust me. Or, don’t, and scroll down, then you’ll see. Place in a preheated 350 degree oven for 10-12 minutes.
See. Told you. Carefully transfer cookies to a wired rack to cool. They’re very soft and fragile.
Now, stick in the next batch. We added sprinkles this time!
After the cookies are completely cooled, you can decorate with your favorite frosting and sprinkles.
We chose red, green and white frosting. Maya was very interested in what exactly food coloring was.
