Crock Pot Chicken Stir Fry

Apparently sometimes you just have to mess things up to get a good recipe. I was feeling kinda low about my ability to throw together a yummy recipe in the crock pot. I failed at one miserably just the day before I came up with this one.
I planned on just following a simple recipe I’d used millions of times to make a yummy pulled pork sandwich. Click here to find that yummy post.
My only difference was I would be using frozen, boneless, skinless chicken breasts. That shouldn’t be too different, should it?
Well, apparently those little chickens didn’t like it in that hot crock pot for 9 hours. When I got home, they were so dried up, I thought I had screwed up yet another crock pot meal. I was mad.
But I was determined to fix this. I’ll just dump in a buttload (yep, I said it, I’m a mom, I can say it, but my kids cannot), so where were we, yes, a buttload of bbq sauce. Ugh! No bbq sauce! Well, hmm, maybe this crunchy natural peanut butter I have here will add something yummy to the mix. I’ll just add a big spoonful… Yeah, nope. That made it almost worse.
What else? Ketchup. Yep, that’s in bbq sauce, right? I’ll squirt some in there. Hmm, interesting.
Water! I think I need water. I added at least 2 cups of warm water and voilá! That dried out chicken just soaked up that water.
Hmm, this would be good served over rice. AND with steamed veggies. So, that’s what I did. I took my ruined crockpot chicken and I turned it into something amazing! Don’t forget the sirachi. That was key. I drizzled it over the top of my single serving, as Preston and Maya aren’t spicy fans.
