Double-decker tacos

Please excuse the following pictures. I did not do a great job taking them, but I think you’ll get the point, and maybe you’ll realize just how simple the meal was.

Taco shells, tortillas, velvetta (or the like), salsa, refried beans, taco seasoning packet (I forgot to put it in the pic), tomatoes, cucumbers (my lettuce substitute, I would recommend the lettuce and the cucumbers, if you have them).

First step was to brown 1 lb of hamburger. Drain grease, add 3/4 cup water and 1 packet of taco seasoning. Bring to a boil and then simmer for 5 minutes.

Looks about like this. I ended up adding 3/4 of my can of refried beans in mine. Mmm, love those beans.

Preheat oven to 350ยบ and bake taco shells for 4-5 minutes, I flipped mine halfway thru.

This here is heaven in a bowl. Velvetta, salsa and 1/4 can of refried beans all microwaved into cheesy-beany goodness. Yum!

Dice up cherry tomatoes and cucumbers — you can use any kind of tomato you’d like and I would def recommend lettuce at this point. We just didn’t have any, that’s where the cucumbers came into play. And I would totally add them again, even if I did have lettuce.

Sorry, no pics of the assembly but here’s how it all went down:

Lay one tortilla down, spread melted cheesy-beany goodness on top. Wrap tortilla around taco shell. Fill taco shell with meat mixture, then cucumbers & tomatoes (and lettuce), top with more melty cheese and then finally salsa.

Preston hates sour cream, and I didn’t have any, but I LOVE it, so I would highly recommend adding a dollop of sour cream on the top. A big dollop.

    Yum! Oh how I wish I could have stopped by for dinner tonight! We had stuff from the freezer again (at least the chest freezer is finally empty now)… I think I know where the inspiration came from and I KNOW Rocky would love these.. I’m definitely going to make these some time.. Plus I think I’ll try to make some with chicken and ranch with tomatoes and cucumbers also! Seriously, you always think of the best food!

      Where’d the inspiration come from? Kim you always leave out the best parts of a story. Kim, you should be a suspense writer.

        Well, the whole double-decker taco came from Christine back when we were working at Gambino’s. She told me about how she makes them, I think it was just refried beans between the shell and the tortilla. So that’s how I used to make them. Well I’d do refried beans, mixed with some salsa and shredded cheese (all heated up) and then spread it on. Those were good too. But then a while back I decided to add some velvetta instead of the shredded cheese. Sooooo much better and then you have to put that on top too.

          Anything with melted cheese I’m a fan of. Didn’t they used to (or still do? I don’t go there, but vaguely remember commercials) have double-decker tacos at Taco Bell? I bet yours are waaaaaaaay better. I don’t know why people like TB? Hell, it’s a disease! ;-)

          And I like the idea of cooking the shells before using them. I don’t really like prep-made corn taco shells, but I bet heating them up would help!
