Homemade Mashed Potatoes

Potatoes and a Tater Baker. What’s a Tater Baker? It’s awesome, that’s what. My mom got this for me from a church picnic and I LOVE IT! You put the potatoes, skin and all in this little bag and you pop it into the microwave. I mean, good luck finding one of these things, but I’m just sayin’ — it’s awesome!

You can, of course, peel your potatoes, cube them up and boil them, the old fashioned way. (:

Other ingredients: Milk, butter, garlic salt and cream cheese (this is key).

Place 5 potatoes in the Tater Baker. Microwave until potatoes are soft. This took probably about 10 minutes. I love it because I don’t have to make sure the water doesn’t boil over on the stove (much easier with a 2-year-old).

Peel potatoes. I feel like peeling the potatoes are much easier after they’ve been in the microwave too. I hate peeling pre-cooked potatoes!

Chop ‘em up.

Dump ‘em all in a large pan (or bowl, whatever).

Add your butter, I did 6 TBSP with the 5 large potatoes.

Next add 4 oz of cream cheese (half a brick). This cream cheese is what makes the potatoes creamy. A nice little secret I learned from my mom. Love it!

Garlic salt, to taste.

Milk, well I just dump, so that’s basically a preference. Depends on how smooth you like your potatoes.

Start mixing. I always have to add more milk after I start mixing. I like mine creamy.

See. Mmmm.

Serve with your cute little meat muffins and green beans.

    I feel like a huge slacker in the cooking department. We had El Portal tonight and bagel sandwiches for dinner last night. If I could only find my big pot I could boil these lasagna noodles and make some lasagna (not to mention I couldn’t do it last night because I sat the hamburger out in the sink to thaw yesterday and forgot about it and left it in there ALL day, so I had to get more out today).

    Rocky would LOVE this meal, I am definitely going to make it soon!

    Mmmmmmmmmmmmmmmmm….. Now I NEED some! I like the peels, especially with red potatoes. I’ve never done cream cheese. But if you ever don’t have milk (ok you have a kid, so you’ll have milk all the time, but maybe someone else won’t), you can use chicken broth, too. And I love black and red pepper, too. Seriously, need mashed potatoes!

    And I never considered using my tater baker (or whatever it’s called). Great idea!!

    I know! Before Kendra had her tater baker she would always microwave or used baked potatoes and I thought it was a genius idea!
