Don’t worry, these are just a cuter version of meatloaf. (:
Ingredients: 1 lb ground beef, ketchup, mustard, worchestershire sauce, sour cream, stuffing, eggs, shredded cheese, minced garlic (not shown), salt & pepper.
Dump ground beef in a large bowl.
Add packet of dry stuffing.
Add a generous 8 oz of sour cream. I had a 16 oz tub and I’ll bet I used more like 10 oz of it. (:
Then, squirt in 1-2 TBSP mustard.
Next comes the ketchup. 1/4 to 1/2 cup, depending on how ketchup-y you like it.
Shredded cheese. Again depending on how cheesy you want them. I used a cup.
Then shake in some worchestershire sauce. 3 or 4 good shakes.
Then dump in 3 eggs.
This is the garlic I used, because I rarely have fresh garlic in the house. Minced tastes just fine to me.
A nice big spoonful. I could hardly taste it, so I could have used two.
Salt and pepper. You don’t need much of either because there is some seasoning in the stuffing mix.
There’s all the stuff, ready for mixin’.
You could get in there with your hands, but I had a two-year-old watching, so I just used a spoon. This mixture is really pretty saucy because that’s how I like it.
Spray 2 – 12 count muffin tins.
Spoon an even amount into each tin. Bake in a preheated 350º oven for 30 minutes.
While baking, having your two-year-old clean the counters.
