Alright, as I promised, my favorite cookie recipe: Monster Cookies (or bars).
What you’ll need: eggs, white sugar, butter, baking soda, oatmeal, chocolate chips (hershey kisses), brown sugar, white syrup, peanut butter, M&Ms and vanilla.
Start by cracking 6 eggs into a very LARGE bowl. Trust me, you won’t regret finding the largest bowl you have.
Next, add 2 sticks of softened butter (or oleo, or whatever you have, heck I used Country Crock)
Next, sprinkle in 4 teaspoons of baking soda
Then 1.5 tablespoons of white syrup.
Next comes the brown sugar. You’ll need 2 and 1/3 cups. I made sure to pack mine down.
2 cups of white sugar.
1.5 teaspoons of vanilla.
2.5 cups of peanut butter. I think this is what makes the cookie for me.
Get out your hand mixer and start mixin’
The batter should look like this after a few minutes.
Don’t forget to scrape down the sides and bottom of the bowl. Gotta get it all mixed in real good.
Now you’ll start dumping in the oatmeal. It takes 9 cups, but start out slowly.
I poured in 4 cups then started with the mixer.
It was getting pretty stiff, so I decided to mix up the rest by hand. Remember, it’s 9 cups of oatmeal!
After the oatmeal is incorporated, it’s time for the M&Ms, I went for dark chocolate this time. You’ll use the WHOLE bag, and remember to get the large bag.
Next, the recipe calls for 1 cup of chocolate chips. I didn’t have chocolate chips, but I did have some dark chocolate hershey kisses. So, I decided I would just chop them up.
Beautiful addition to my lovely monster cookies.
Look at this batter, I could eat it with a spoon, or a fork, or just by the fistful.
Next, you need to spray a cookie sheet.
I usually just make my monster cookies into bars, it’s way easier. I mean, can you imagine making that many cookies. Did you see how much dough you had there?
Start pressing it down into the pan. Usually this takes two very large cookie sheets.
See. Now, put in a preheated 350 degree oven for 20 minutes. Or until edges start browning up.
I did have a little bit of dough left so I thought I’d show you how to make them into cookies. These are “monster” cookies, so you’ll need to grab your ice cream scoop (or ladle, whatever large scoop you have).
Nice big cookies.
These will just take around 12 minutes in a preheated 350 degree oven.
Look how scrumptious those look. Oh and make sure to try not to overbake these. They’re actually best if the center looks a little underdone. They’ll continue to cook.
